What are some quick, healthy meals I can make for my family and I?
Neither of my parents really have time to make homecooked food anymore because of their demanding jobs. We have been eating those microwaveable dinners for some time now, but I had an idea: maybe I could help out by making dinner for everyone every night? And maybe you guys could give me recipies for quick, healthy meals that I could cook for my family?
I have decent (but not amazing) cooking skills because I'm only 16, so easy/medium recipies, please.

Anything you cook at home is more healthy than those microwaveable dinners or take-out.
Cook some boneless skinless chicken breasts in a large skillet with a little oil about 4 minutes per side on medium heat. Add one chopped onion, cook briefly and add 1 cup of chicken broth. Cook about 3 minutes then add one jar of spaghetti sauce. Turn heat to low, cover and let simmer until chicken is done, approximately 20 minutes. Meanwhile, cook some pasta following directions on the box. Drain the pasta and serve the chicken and sauce over the pasta. Serve with a bagged salad and Italian bread.

Hamburger Rice Soup
1 pound ground beef
2 (14.5 ounce) cans diced tomatoes
2 cups cubed potatoes
2 carrots, chopped
1 onion, chopped
4 teaspoons salt
1/4 cup uncooked white rice
1/8 teaspoon ground black pepper
6 cups water
DIRECTIONS
In a large saucepan over medium heat, saute the ground beef for 5 minutes, or until browned. Drain the excess fat and add the tomatoes with liquid, potatoes, carrots, onion, salt, rice, black pepper and water. Bring to a boil and reduce heat to low. Simmer for 1 hour and serve

Creamy Chicken Enchiladas
2 cups chopped cooked chicken or turkey
1 cup chopped green or red pepper
1 8oz jar Pace picante sauce, divided use
1 8oz package Philadelphia Brand cream cheese, cubed
8 flour tortillas (6 inch)
¾ LB Velveeta Process Cheese spread or Velveeta Light, cubed
¼ cup milk
Stir chicken, green pepper, ½ cup picante sauce and cream cheese in saucepan over low heat until smooth. Spoon 1/3 cup chicken mixture onto each tortilla; roll up. Place, seam side down, in lightly greased 8 x 13 baking dish.
Stir cheese spread and milk in saucepan over low heat until smooth.
Pour sauce over tortillas; cover with foil.
Bake at 350F for 20 minutes or until thoroughly heated.
Pour remaining picante sauce over tortillas.
Makes 4 to 6 servings

Pie:- Fish
2 Fish Fillets. (Red Cod)
1 Fish Fillet. (Smoked)
1 Large Leek. (Roughly Chopped)
2 Cups Peas.
1 Medium Onion. (Roughly Chopped)
4 Eggs. (Hard Boiled)
Mashed Potatoes.
Cheese. (Grated)
Cut fish into bight sized pieces and poach in milk for a few minutes until nearly cooked. Drain and reserve milk.
Lightly fry the onions and leeks for a few minutes to soften a little.
Stir in the milk and simmer until onion and leeks are nearly cooked.
Thicken a little to make a sauce.
Arrange fish in a casserole dish, top with peas, chopped egg and spoon in the leeks and onions and a little of the sauce.
Top with mashed potatoes, sprinkle with grated cheese (tasty/sharp) (optional)**
Bake in a 180C (350F) oven until it is bubbling and the cheese has begun to colour.
**At this point it could be kept in the fridge for later or the next day covered..

When I was that age I found it really easy to make wraps. You can defenately put some healthy stuff in it, like lettuce, tomatoes and even fruit like mango.
What I really like is a wrap with lettuce, chicken seasoned with seasoning salt (This you can also keep it the fridge if you don't have time to prepare), ranch sauce and a bit of cheese. But of course you could also make more spicy wraps by changing the cheese and ranch sauce for chilli sauce. These are just a few suggestions, but of course this is a really easy dish to experiment as well.
I hope this gives you an idea, and hopefully your parents will like it as well. However, if you have time, I would suggest to look on internet for some healthy dishes as well, because there is defenately loads of good food to find there. good luck with it.

This is an easy recipe it looks like alot but really is easy and quick .. cook all in one pot.

CHICKEN AND SAUSAGE JAMBALAYA
3 lbsChicken portions (I used skinless ,boneless breasts)cut into cubes
3 Tbsp. Butter or margarine
1 lg. Onion -roughly chopped in chunks
3 stocks Celery -roughly chopped in 1" pieces
1 lg green pepper - roughly chopped
1 clove garlic - chopped
½ - 1 tsp cayenne pepper
½ - 1 tsp. Black pepper
½ - 1 tsp. white pepper
1 cup uncooked rice(not minute rice)
1 - 14 oz. can tomatoes- chopped with juice
6 oz - smoked sausage cut into ½ā slices(I use Italian Hot sausage)
3 cups chicken stock (oxo cubes are fine)
Melt butter in a large saucepan, and fry the onions slowly ,til start to brown slightly, add celery, green pepper and garlic and cook for a couple minutes. Then add the remaining and mix well. Bring to boil then reduce heat and simmer until chicken is cooked and rice has absorbed the liquid. (If you need more liquid add a little water). Itās ready when rice is tender and chicken is cooked. Enjoy!
If you donāt have white pepper add a tiny bit more of the other peppers. If you don't like spicy then don't add the pepper and use mild sausages.
Cooking time = 20 - 25 mins.
