Atkins Recipes: Mock Danish

I performed my first low carb cooking demonstration and showed the world the wonders of the mock danish. Mock danishes were one of the new comfort foods that I learned how to cook and was used to kill cravings that threatened the diet early on. Some qualifications for Kent’s comfort foods were it had to be both easy and quick to make, and it could not have a lot of ingredients to prep. Most of the recipes, I will be demonstrating have my seal of approval for taste and ease in preparation. :-)

Here is the Mock Danish recipe:
2 oz Cream Cheese, softened
1 egg
1.5 - 2 tsp Splenda (**count against artificial sweetener count for the day)
1/2 tsp Vanilla
1 TBS Ground Flax meal (optional)

Topping
1 TBS Butter
.5 tsp Splenda
Dash Cinnamon

    That is cool about the blood sugar. It is amazing how quickly the blood sugar can get more under control as one changes their diet. Congrats on inspiring your mom to try it too.

    thanks that is all i need to hear. i am from hawaii and half japanese and korean and i was raised with lots of meat and being in hawaii rice. my blood sugar was about 345 a few days ago, now its 170. the cool thing is my mom is trying it too, she never liked any diet before. thanks

    When I started …
    When I started Atkins, my total cholesterol was 195 with my LDL of 150 and HDL in 40s. Since then my cholesterol has dropped 50 points to 148/95/53. So my bad cholesterol went down, and my good went up. My triglycerides also dropped to near basement levels of 35. My doc could not be happier.

    your food looks good. i am a diabetic and think the atkins would do me good. i watched to bbc atkins and they said that colesterol was good for the people that did the atkins, do you mine if i ask how is yours? peace

    Mock Danish saved me last night! My husband went to the freezer and started scooping out his ice cream so I fired up the microwave and made a yummy low carb mock danish. Craving demolished.

    The packets are ” …
    The packets are “bulked” with maltodextrin (a complex carb), and it should be counted for .6 carbs per packet. The actual sucralose has no carbs, so if you use liquid Splenda (Ebay), you can avoid counting it.

    On page 87 - “It (saccharin) can be safely consumed in moderation, meaning no more than three packets a day.”

    On page 95 - “Limit sweeteners to three packets a day.”

    Kent;) How do you fugure out the carb count in splenda is it diffrent; from the packets? OH u said in this video to count the spnda agianst ur artificial sugar count for the day, i read the atkins book i dont remember it saying anything about this?

    Thanks for responding to my “sugar intake” question regarding the Cream Cheese. I was indeed confused about how you read the sugar grams in the Nutritional facts; I’ve was on the Adkins years ago, and I did lose a lot of weight but I never ate anything that indicated any sugar grams on the NF - never considering the ingrediants. I know that this should have been common sense. This is good news for me. This is why your videos are so so helpful. Thank you.

    I think you are confusing added sugar (sugar in the ingredients) to natural sugar within the product — like tomatoes or cream cheese. I just checked my Wal-mart brand cream cheese, and while it has sugar (1g) in the nut. info, it does not have any in the ingredients. Since it is on the Acceptable Foods List, the recipe is perfectly fine for Induction.

    This looks yummy, however, I cannot find Cream Cheese without sugar. The closest to no sugar was less than one gram. Being on the induction, sugar is out, right? So, is this receipe for the maintenance phase or is there actually a cream cheese with no sugar somewhere? Thx for your videos ~

    Less sweetener the better. I have a feeling Dr. A really didn’t think any artificial sweeteners were necessarily good, but granted them into the diet to make it more palatable. Could it stall you and cause cravings? Yes, there is a cephalic insulin reaction where the hormone insulin is released only because you thought were eating something sweet. You are doing very well in resisting the urge.

    Veggies are definitely a lot sweeter and tastier on Atkins than before.

    Will adding things like Spenda cause a stall in a sugar additct like me? ;) I’m on day 4 now, and haven’t had any sweet things. Should I just keep going? (I still really want sugary stuff every day! I find myself finding ways to include a tomato because it’s tasting sweet to me now!)

    Yep, everything is completely Induction legal. You do need also to be mindful of total sweetener limit per day of 3 servings (packet, can of pop, crystal light, etc.). I am glad you liked it.

    Just mad this! AWESOME! tatsted like cake to me! this is ok for induction? as long as you have less than 4oz of cream cheese aday or less? thats alot…half of a cream cheese spread bucket.

    Thanks so much for your video. I have made this many times and it never turned out so good. You stirred it alot more than I ever did and that made all the difference. I would get eggy tasting clumps which I didn’t like. I just ate it and it was soooo good. Thank you for your video.

    No, before Atkins I was never a fan of eggs. I just didn’t like the taste. Now, I am all about quiches and custard dishes. Stevia’s great, but it has the same problems all Artificial Sweetener have — cephalic insulin reaction. I would still limit my intake to about 3-5 per day even during maintenance. I also have never cooked with it, so I am unsure how it does.

    What you’re fed up of eggs? I must admit Ive never had a problem there, and never needed the sweetner either, despite having a sweet tooth. Everything tastes sweet when you limit your carbs to less than 10gms a day - for a month. Now I’m doing the low GI diet successfully. i’d be interested to hear your thoughts on Stevia?!
