What quick and easy meals can I give my 1 year old who likes to feed himself?

I buy most food from Health food store (mainly because of allergies, but most foods are healthy)

toast cubes with 100% fruit preserves, chunks of flavored tofu, chunks of cheese, “trees” (broccoli) with melted cheese, sliced hot dog, chicken nuggets and fish sticks, fruit chunks, cereal pieces, pieces of lunch meat, peas n carrots, corn, re fried beans, beans, rice, macaroni…

Basically I just go down each isle and if it looks like something she could eat, I buy it. I don’t usually prepare actual meals… I just give her a variety of finger foods. You don’t have to worry about each meal being completely balanced… as long as you give him balanced and nutritional foods throughout the day, he will be fine.

Meal examples I give to my 16 month old (most of which she feeds herself, baby food veggies are great, you can just sneak in bites in between bites of something he is feeding himself…. also my daughter is allergic to eggs milk wheat and nuts, so my suggestions might sound weird to you)
Breakfast: Bowl of baby food fruit mixed with infant iron fortified cereals, toast cubes with apricot preserves, peach chunks, sippy cup of vanilla soy milk, and maybe some cereal pieces if she is still hungry

Snack: fig newtons, ice water

Lunch: Tofu chunks, some kind of fruit, juice, “cheese” chunks, crackers

Snack: oatmeal cookies, ice water maybe a formula bottle

Dinner: some kind of veggie, fish stick chunks with tiny no sugar added ketchup, bread chunks, cheese chunks, juice

before bed (before brushing teeth), iron fortified toddler soy formula bottle

    I gave my son everything we ate at dinner just diced up so small it was very hard to determine what it was, lol, it was just really messy. Now, my son eats everything we eat and loves it. Vegies and all! I even gave my son his own utensils and at 2 yrs old he is good at feeding himself…with his hands still lol, always has the fork and spoon in one hand up in the air and hand in the plate lol! I love this feeding stage.

    give him juice and a few grapes and there is your fruit :)

    PLease DO NOT GIve him hotdogs like the girl under me said it is the Biggest Food kids CHOKE ON!

    My two favorite buy it ready meals are the michilinis chicken littles, and the one with popcorn chicken and potato fritters(shaped like happy faces). They are about a dollar a piece though. My daughter also loved, loved, loved, raviolis, the graduates or chef boyardee(I won’t eat it, but she loves em) mini raviolis. I’d cook regular raviolis for my boyfriend and I, and cut them into four pieces with a bit of butter on them, and she’d gobble down almost 8 whole ones, lol. Also, if you can buy the rediserve chicken nuggets/tenders/popcorn and repackage them in a good serving size, then they are microwavable right at home and you get anywhere from 10- 20 servings, perfect for snacks or dinner in a pinch.

    mashed potatoes, cooked carrots, peas, apples, cheese, or anything that he can easily swallow with out choking.

    Diced chicken nuggets (no more then 3 or 4 at a time) supervised

    small chunks of banana.

    dry cereal (like fruit loops)

    diced Hot dog (no more then 3 or 4 at a time) supervised

    thinly apply peanut butter on 1 piece of bread ( if no allergy)
